Biting into a juicy, perfectly seared steak can bring much happiness. Grilling a steak is one of the best ways to achieve this happiness, whether you like them rare or medium. But you can “grill” your steak indoors and it can be just as good.

Two hacks for that perfect steak indoors is a heavy cast iron skillet and room temperature steak. For two, 10 ounce steaks, 1-1/2 inches each. heat an iron skillet over medium-high heat and add 2 tablespoons each of butter and olive oil. Once the butter stops foaming and the skillet is hot, add the steaks. DO NOT MOVE THE STEAKS. Let them cook for 3-1/2 minutes. Flip the steaks and cook the other side for another 3-1/2 minutes WITHOUT MOVING THEM. Turn off the heat, transfer the steaks to a plate and tent with a piece of foil for 10 minutes.
